1. Soak peas overnight to soften (soaking isn’t necessary, however by soaking you will reduce their cooking time).
2. Place the split peas into a saucepan and cover with cold water (add 3 cups of water for every 1 cup of Split Peas). Bring to a gentle simmer and cook for approx 30 mins or until the Split Peas are al dente. Drain and set aside to cool.
