HOMEMADE, BAKE FREE SESAME BARS

INGREDIENTS

  • 1 cup sesame seeds

  • 1/2 cup Nature’s Delight honey

  • 1 tsp lemon juice

  • 1/4 cup sugar (optional - if not using sugar you will need to place in the refrigerator for your bars to firm up).

  • 2 Tbsp of Nature’s Delight Pepita Seeds

  • 2 Tbsp of Nature’s Delight Dried Cranberries

  • 1/2 cup your fav Nature’s Delight nuts


METHOD

  1. Add sesame seeds to pan and lightly cook over a low to medium heat until just golden brown. You want to be careful not to over cook your sesame seeds. When golden remove from heat and place in a bowl (don’t leave them in the hot pan). Add to the bowl your Peoria seeds, nuts and dried fruit.

  2. In a saucepan warm your honey, lemon and sugar over a medium heat until simmering. Stir continuously and let simmer for 5 mins. Immediately add in the toasted sesame seeds, pepitas, dried cranberries and nuts, mixing well to combine.

  3. Transfer mixture to a small pan lined with plastic wrap (or parchment) press down firmly until evenly flattened. (A spatula brushed with olive oil makes the perfect implement to flatten with).

  4. Set aside and let it firm up. When semi firm remove from the pan and cut into bars. (If not using sugar put them in the refrigerator for about a 1/2 hour to really cool and firm up before cutting).

  5. You can store in an airtight container in the fridge or, if you prefer a softer bar, store at room temperature.
