INGREDIENTS
120g unsalted butter, softened
200g brown sugar
4 ripe bananas, mashed
2 eggs
1 1/2 cups plain four
1 tsp baking soda
1 tsp vanilla extract
1/2 cup Nature's Delight walnuts, chopped
Nature's Delight Blanched Almonds, to garnish
3/4 cup Nature's Delight Maple Syrup
METHOD
Preheat oven to 160°C. Grease a non stick loaf tin (21cm x 11cm).
Place the softened butter and brown sugar into a bowl. Beat with a stand mixer or hand-held beaters for 2 minutes or until pale and fluffy.
Add the mashed banana and the eggs to the creamed butter mixture. Beat for 30 seconds or until well combined.
Sift the plain flour and baking soda into the bowl. Then add the vanilla extract and fold with a spoon. Mix in the chopped walnuts.
Pour the mixture into the tin. Sprinkle with blanched almonds.
Cook for 1 hour until golden, or until skewer inserted into the middles comes out clean.
Allow to cool before removing from tin and placing on wire rack. Enjoy!
