INGREDIENTS
Base
1 cup organic Medjool Dates
1 cup Nature’s Delight Walnuts
1 cup organic shredded coconut (we’re currently loving @natureslane’s organics)
1 tbsp organic coconut oil
Filling
1 cup organic Medjool Dates
1 cup walnuts
2 tbsp organic maple syrup (or sweetener of your choice)
1 tbsp organic coconut oil
1-2 tbsp of water (or more if needed)
Topping
Melted dark chocolate
Crushed walnuts
METHOD
Base
Blitz all base ingredients together in a food processor until dough-like consistency forms.
Press base mixture firmly into coconut-oil greased square cake tin and lined with baking paper for easy removal.
Place in freeze for half an hour or just while you make the filling.
Filling
Blitz all filling ingredients together until a caramel consistency forms. Add more water if it’s too thick and sticky.
Spread filling evenly over the base mix using a spatula.
Place in freezer for at least half an hour, or until filling sets.
Topping
Pour melted dark chocolate over the set base and filling, adding crushed walnuts as well to garnish.
Place in freezer for another ½ hour – 1 hour, ensuring everything has set.
